INGREDIENTS:
Cupcakes:
- 1 Oatmeal Chocolate Chip Quest Bar®
- ¼ cup unsweetened almond milk
- 1 tablespoon sugar-free chocolate chips
- 2 egg whites
- 3 tablespoons zero-calorie sweetener
- 1 tablespoon nonfat Greek yogurt
- ½ teaspoon vanilla extract
- ¼ cup oat flour
- 1 tablespoon coconut flour
- 1 teaspoon cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- Pinch of salt
Cookie dough:
- 2 scoops Quest® Vanilla Milkshake Protein Powder
- 1 Oatmeal Chocolate Chip Quest Bar
- 2 tablespoons butter, softened
- 2 tablespoons zero-calorie sweetener
- 3 tablespoons almond milk
- ½ tsp vanilla extract
- ⅛ teaspoon salt
- 2 tablespoons oat flour
- ¼ cup quick oats
- 2 tablespoons sugar free chocolate chips
INSTRUCTIONS:
Cupcakes:
- Preheat oven to 350°F.
- Break Quest Bar® into small pieces.
- In a small bowl, add Quest Bar® pieces, almond milk, and chocolate chips. Microwave for 1 minute. Stir until smooth.
- In a bowl, mix egg whites, sweetener, yogurt, and vanilla extract.
- Spoon in Quest Bar® mixture, and continue mixing until completely combined.
- Add oat flour, coconut flour, cocoa powder, baking powder, baking soda, and salt. Mix until smooth.
- Line cupcake tray with cupcake liners and spray with cooking spray.
- Fill cups with batter 3⁄ 4 full.
- Bake for 20 minutes, or until an inserted toothpick comes out clean. Let cool.
Cookie dough:
- Blend Quest Bar® into a powder.
- Cream together the butter, sweetener, and powdered Quest Bar® until smooth.
- Add in almond milk, vanilla, and salt
- Stir in oat flour, Quest® Protein Powder, quick oats and sugar free chocolate chips until combined.
Assembly:
- Top each cupcake with cookie dough.
