Vegetarian Recipe The Rice Yum Bowl

What do you get when you throw a heaping helping of rice in a fancy bowl, and add all your favorite fixins? You get a yum bowl! That’s right, a yum bowl. And how can you wrong eating anything called a yum bowl?

Begin by cooking up a big ole bowl (or half a cup) of your favorite rice – brown, white, short grain, long grain, we don’t judge. You probably know how to cook rice, but in case you don’t, we’ve included the instructions in the video.

While the rice is cooking to your liking, add a bit of oil to a sauté pan, and set pan on medium heat. To your pan, add white onion, shredded carrots, and sauté for about five minutes. Just get those onions looking nice and clear. Now throw in black beans and whatever else you can think of to make this bowl a colorful dish of nutrition. We added broccoli to get a little green in there, but use whatever you’d like.

Keep on a low heat just long enough to get the beans and veggies nice and hot. In a separate small bowl, add a cup of your favorite hummus. And yes, there are tons of amazing options out there. Tomato basil, jalapeno, roasted red pepper, plain, whatever; the list goes on and on!

Yes, hummus is that good. It pretty much deserves its own aisle in the grocery store. To your hummus, add curry powder and sour cream. We used a fancy vegan sour cream, but work with what you got.

Give that concoction a good stir then plop it on top of your rice. Add your bean and veggie mixture then top it off with avocado. If you’d like to stare at this bowl of perfection, go right ahead. It’s a beauty to lay your eyes upon, but we assure you, it’s even more beautiful going down your gullet.

  • 1/2 cup rice
  • 1 cup water
  • 1 Tbs oil
  • 3/4 white onion
  • 1 cup shredded carrots
  • 1 can black beans
  • 1/2 head broccoli
  • 2 tsp curry powder
  • 1/4 cup vegan sour cream
  • 1 cup hummus
  • avocado
