You’re gonna be packing a creamy dreamy coconut sweet cream between layers of perfectly ripe peaches (assuming you found a perfectly ripe peach), and then tossing in a crunchy layer of raw nutritious goodness.
Take a can of coconut milk and put it in your fridge upside down, and let it chill there overnight. The next day, pull out your trusty food processor, and add half a cup of raw almonds, half a cup of rolled oats, and half a cup of Medjool dates. Now throw in some cinnamon, cardamom, and some vanilla extract. Process that together, and look at that amazingly nutty texture that’s going to taste incredible, and add an amazing crunch to this parfait.
Next, take your perfectly ripe peach, and cut it up. Remove that coconut milk that’s been chilling in your fridge, keep it upside down, open it up, and pour out the coconut water. You’re not gonna need that milk for this recipe, so keep it for a fantastically coconutty smoothie later on. So in the can, you’re left with a sweet coconut cream. That’s the stuff you’re gonna want. Spoon out the cream into a frozen mason jar and add your sweetener of choice and a bit of vanilla. Screw the lid on, give it a good shake, and now it’s time to assemble your personal parfait.
Grab your favorite small jar, and throw in a layer of crunchy, nutty goodness. Add some sweet cream, then some peaches. Repeat the layers again, then rejoice, because this is flippin’ delicious.
